Perfect Chocolate Chip Cookies (Vegan)

Notice how the title doesn't say, "Perfect Vegan Chocolate Chip Cookies"? That is because these are not the best alternative version to a classic--they are the best version period. After trying six different types of sugar, coconut won out in the end.

Chocolate Chip Cookies
  • 2 flax eggs (2 tablespoons ground flax whisked with 4 tablespoons water)
  • 1 1/2 cups coconut sugar
  • 3/4 cups + 2 tablespoons Earth Balance vegan butter spread from the tub (the tub spread does taste different from the sticks)
  • 2 teaspoons vanilla (I have found brand name to taste better than the generic in this instance)
  • 2 cups flour
  • 1/4 cup quick oats
  • 3/4 teaspoon salt and baking soda (each)
  • 1/4 teaspoon cinnamon
  • 1 1/2 cup chocolate chips
  1. Preheat oven to 350 degrees.
  2. Prepare flax egg. 
  3. Beat sugar with butter until well-combined. Add flax egg and vanilla. Mix well. 
  4. Stir together all dry ingredients in a separate bowl. 
  5. Add both mixtures to one bowl and stir until just combined. 
  6. Sample cookie dough (this is essential).
  7. Drop rounded tablespoons of dough to a cookie sheet (I have not noticed a significant difference between greased and ungreased with this recipe).
  8. Bake 15 minutes. Let cool then devour.
Servings: 24 cookies
Time: 90 minutes
